Linux self-hosted assistant support

Would love to see the Vellum assistant available as a self-hosted option on Linux. Currently the assistant is macOS-only for local hosting, which locks out a large portion of developers and power users who run Linux as their primary OS or on home servers. Use cases include: running a private/locally hosted assistant on a Linux home server or NAS, self-hosting for privacy-conscious users who don't want data routed through the cloud, and teams who standardize on Linux infrastructure. This would pair naturally with the existing self-hosted assistant work and open Vellum up to a much wider developer audience.
